Spicy balsamic and garlic grilled eggplant

Ingredients

  • 2 eggplants (6-7 inches long)
  • 4 teaspoons of canola oil
  • 2 tablespoons of balsamic vinegar
  • 1 teaspoon of garlic powder
  • ½ teaspoon of salt
  • Optional: ¼ teaspoon of cayenne pepper
     

Instructions

  1. Trim ends of eggplants and then cut lengthwise into ¼-inch thick slices. 
  2. Next, in a small mixing bowl, stir 3 teaspoons of canola oil, balsamic vinegar, garlic powder, salt and cayenne pepper together. 
  3. Brush both slides of eggplant slices generously with vinegar mixture. 
  4. Heat gas grill to medium-high heat and brush grill grates lightly with remaining canola oil. 
  5. Grill coated eggplant for 12-15 minutes or until black grill marks appear, flipping and brushing with remaining vinegar mixture every 3-4 minutes. 
  6. Serve and enjoy!
